Making Vanilla Extract to give away as gifts is super simple. I like to get started at this time of year so that it is ready by Christmas. I usually make my Extract with Grade B Bourbon Madagascar Vanilla Beans and Vodka. For a liter of vodka you would need about 25 5 inch beans. You would then store it in a cool dark place and give it a shake every day or so for at least two months. This year I am making two batches with new recipes. One using Bourbon and one using Rum. I wanted to experiment and compare the flavors. Today I finally received my order of beans after waiting a month for their arrival! I am so excited to see how this turns out.

I would never have thought that vodka would be used in vanilla extract! What exactly does it do?

I think the alcohol is just used to break down the vanilla beans to create the extract. Not really sure how though
