Butternut soup with Brie and Bacon

I made this soup for dinner the other day. The only thing I swapped in the recipe was the pancetta for bacon, it’s basically the same thing. Instead of making it in the pan, I just cooked it in the oven for 12 minutes until crispy.

I think it was good, although I prefer the previous butternut cheddar soup I made last week. 🎃
