Over the weekend I decided to make some granola, I usually always make my favourite vegan chocolate granola but I wanted to switch it up this time.
Here’s the list of ingredients:
3 cups cornflakes and quinoa puffs
2 cup oats
1 cup rye oats
2 cups nuts and seeds (I used sunflower, pumpkin, chia, sesame, flaxseed, hazelnut, almond and walnut)
1/2 cup coconut chips
2 cups dried fruit chopped (I used plum, apricot, pineapple, mango, candied cherries, yellow raisons, blueberry and mulberry)
3 tablespoons coconut oil melted
3 tablespoons maple syrup
1/2 cup brown sugar
2 teaspoons vanilla
1 teaspoon cinnamon
1/8 teaspoon cardamom
Touch of salt
Set oven to 120 C.
Mix all ingredients together except for the dried fruit.
Place onto two baking trays with baking paper.
Bake for 15 minutes for 4 times, taking the trays out and stirring after each 15 min. 60 min in total cooking time.
For the final 15 min, mix in the dried fruit.
