This is a really nice recipe for cooking roast beef nice and slow in a dutch oven. The video was done around the holidays but roast beef is delicious any time of the year.

What could I replace the Campbell's soups with?

French onion soup is a beef broth with onion flavoring so you could saute some onions to add to beef broth. As for the mushroom soup, I would think a little cream and mushroom would get you close to the flavoring.
