Mexican “Burrito” Brunch Omelette
You can’t go wrong with a good omelette for brunch! Ingredients: Oil 4 eggs Cheddar cheese Spring onion Red bell pepper Chorizo Hash browns (the frozen kind is easiest) Salt, pepper, red chili flakes Toppings: Salsa Creme fraiche (sour cream) Cilantro Method: Bake hash browns in oven until crispy, then chop up. Put eggs in a bowl. I used four eggs. Whisk together. Add spices. Chop ingredients and grate cheese. Fry sliced chorizo. Set aside. To a medium warm pan add oil (I used the same as the chorizo). Pour in eggs. Sprinkle on first the cheddar, then veggies, chorizo and finally the hash browns. Cover. And let sit on medium heat for 10 minutes or until the eggs are cooked through. Serve with toppings.

My favorite way to eat eggs is with salsa. Mexican breakfast tacos are my fav! I have a specific hot sauce and salsa for all variations of breakfast mexican dishes. 😅
