Homemade sourdough whole wheat buns

I made some homemade sourdough buns! I’ve made rye ones before and I think both turned out great. I used store bought sourdough starter and fresh yeast. I used: 150g sourdough starter 50g fresh yeast 500g water lukewarm 150g whole wheat flour 750g flour 3 teaspoons salt 2 tablespoon Olive oil Mix yeast and water. Add all the other ingredients. Knead or use machine to mix. 10 min for machine. 20 min by hand until smooth but not sticky. Let sit in an oiled bowl for 60 min covered. Fold in sides and flip over. Let sit for 60 min. Form into 2-3 bread loaf shapes or into 16 buns. Let sit for 60 min. Set oven to 250c. Turn down to 220c. Place in oven and cook for 15-30 min.
